Fresh Tomato recipe for salsa
A standard and almost necessary accompaniment for most Mexican food is salsa. Salsa (meaning " sauce " in Spanish ) comes in different forms , the most common being chopped tomatoes, onions and peppers. We
grow a Hispanic mother in Tucson , we had salsa with meals several
times a week - with beef and pinto beans , tacos , tostadas , more green
beans.
My job , as a child, was to make salsa for our meals. Usually canned tomatoes and canned ortega peppers . Now
with sauces so good and easily accessible , usually save my sauce
choice of fresh salsas, including this fresh tomato sauce . "Salsa Fresca " or " Pico de Gallo " as it is often called salsa is easy to make , especially because it requires no cooking. Just be careful when handling chiles.

• 2-3 medium fresh tomatoes ( 1 pound to 1 1/ 2 lb) , stems removed , diced• 1/2 red onion , diced• 1 jalapeno pepper (stems , ribs , seeds removed ) , finely chopped• Serano pepper 1 (stems , ribs , seeds removed ) , finely chopped• Juice of one lemonThe cilantro • 1/2 cup chopped• Salt and pepper to taste• Optional: oregano and cumin , or to tastemethod
1 Begin by cutting fresh tomatoes 2 medium sized. Prepare peppers. Be very careful when handling these peppers . If you can, avoid touching them with your hands. Use a fork to cut the peppers in a small bowl , or use a paper towel to protect your hands . Wash hands with soap and warm water after handling and avoid touching your eyes for several hours well . Take a seed peppers . If the sauce is not hot enough , you can add a little heat .
2 Mix all ingredients in a medium bowl. Taste . If the peppers are very hot sauce , add some more chopped tomato . If not hot enough, she added with a careful few seeds of peppers, or add a little cumin .
Let stand for one hour to allow flavors to combine .Makes about 3-4 cups .
Serve with chips, tortillas, tacos, burritos , tostadas , quesadillas, pinto or black beans .
